We would pair it with a hearty roast chicken, over a bed of fingerling potatoes, leeks, and carrots. The grapes are vinified whole cluster, and aged in stainless steel, producing a fragrant, structured and savory wine. Dolcetto, meaning "little sweet one", is nonetheless a dry wine, but displays much brighter fruit and slightly more residual sugar in comparison to other Piemontese grapes. The vineyards for this
