We would pair it with tinned fish, crusty sourdough bread, and a few semi soft cheeses. Farmed organically. After a light pressing, the stems and remaining grapes macerate in the juice for 10 days, and the wine is then is aged for 8 months in concrete, bottled without fining or filtering.
